Here at the exchange we are passionate about championing other independent business. From local breweries to our coffee supplier we do what we can to support our fellow small business owners. One of those wonderful entrepreneurs is the lovely Rachel White owner of The Cake Lady. That's right guys,  you guess it, Rachel supplies The Exchange with her delicious baking goods from cakes to brownies she bakes them all! It's like the taste of home from the cosy surroundings of the bar and you can even accompany that slice of cake with a pint or a glass of wine. Rachel was kind enough to take some time out of her busy schedule to answer some questions so we can get to know a bit more about the woman behind the business..

Q1: Hello! First things first, how did you come up with the idea for The Cake Lady and how long have you been in business? 

I came up with The Cake Lady simply because it does what it says on the tin!  I've been in business now for 12 years. 

Q2: Where are you based? 

I work from home in Oadby.

Q3: Tell us a bit more about yourself and your background?

I first started my business when I became a single parent in 2005,  that was the catalyst.  I started studying business entrepreneurship at the University of Leicester and off the back of that launched my home baking business.  I needed a job that kind of fitted around raising my two boys and baking from home was perfect.

Q4: Do you run your business full or part-time?

Full time,  I bake for around 16 hours a day,  twice a week.

Q5: What does an average day look like for you?

I'm up at 5am, 60 second commute to the kitchen where I bake until 10pm. A few well timed breaks for food and ferrying my son around,  the oven however doesn't get a break!

Q6: Where do you get inspiration for your cakes?

Everywhere!  Pinterest,  other coffee shops, TV take an idea and adapt it to suit.

Q7: What do you enjoy baking the most?

I always start the day making Lemon Polenta,  it's quite simple to make and looks so fresh.

Q8: How long have you been supplying The Exchange? And how often do you make deliveries?

Around 2 years,  I deliver twice a week.

Q9: How do you split your time effectively between baking and doing admin/finances?

Baking days are for just that,  baking.  My admin fits in whatever possible,  days off,  evenings. 

Q10: What's your best seller? 

Lemon Polenta is probably consistently the most popular.
